- ½ cup cornstarch
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 large egg
- 2 tablespoons milk
- 2–3 tablespoons cooking oil, for frying
For the Sweet & Sticky Sauce:
- ⅓ cup honey
- ¼ cup ketchup
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar or apple cider vinegar
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- ½ teaspoon grated fresh ginger
- ½ teaspoon red pepper flakes, optional
For Garnishing:
- 1 tablespoon sesame seeds
- 2 green onions, thinly sliced
How to Make Sweet, Sticky & Crispy Chicken Bites
1. Prepare the chicken
Pat the chicken dry with paper towels. Cut it into small, bite-sized pieces of roughly equal size. Keeping the pieces similar in size helps them cook evenly.
2. Season the chicken
Place the chicken pieces in a bowl and season lightly with salt, pepper, garlic powder, paprika, and onion powder. Toss well so every piece is coated.
3. Prepare the crispy coating
In one shallow bowl, combine the flour and cornstarch. In another bowl, whisk together the egg and milk until smooth.
4. Coat the chicken
Dip each chicken piece into the egg mixture, allowing the excess to drip off. Immediately transfer it to the flour-cornstarch mixture. Toss and gently press the coating onto the chicken for an extra-crispy surface.
5. Cook until golden and crispy
Heat the oil in a large skillet over medium-high heat. Add the chicken pieces in a single layer, working in batches if necessary so the pan does not become overcrowded.
Cook for about 3–5 minutes per side, turning occasionally, until golden brown and cooked through. The chicken should reach 165°F (74°C) internally.
Transfer the cooked chicken to a paper towel-lined plate or wire rack.
6. Make the sticky sauce
In a clean skillet or saucepan, combine honey, ketchup, soy sauce, brown sugar, vinegar, sesame oil, minced garlic, ginger, and red pepper flakes.
Bring the mixture to a gentle simmer over medium heat. Cook for about 2–4 minutes, stirring frequently, until the sauce becomes slightly thicker and glossy.
7. Combine chicken and sauce
Add the crispy chicken bites to the skillet. Toss gently for about 30–60 seconds, making sure every piece is coated with the sweet, sticky sauce.
Avoid cooking the chicken in the sauce for too long, as this can soften the crispy coating.
8. Garnish and serve
Transfer the chicken bites to a serving plate. Sprinkle with sesame seeds and sliced green onions. Serve immediately while the chicken is still warm and crispy.
Tips for Extra-Crispy Chicken
- Pat the chicken dry before coating it.
- Cornstarch helps create a lighter, crunchier crust.
- Don’t overcrowd the skillet; cook in batches if needed.
- Let excess egg mixture drip off before applying the dry coating.
- Toss the chicken with the sauce just before serving to preserve the crunch.
- For a thicker glaze, simmer the sauce for an extra minute or two.
Serving Ideas
Serve these chicken bites with steamed rice, fried rice, noodles, coleslaw, roasted vegetables, or a simple cucumber salad. They also make a delicious appetizer served with toothpicks for easy sharing.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. For the best texture, reheat them in an air fryer or oven rather than the microwave. The sauce may make the coating softer after refrigeration, but reheating at a higher temperature can help restore some crispiness.
